When I was a little unicorn loving tomboy (yes, its a possible mix), I loved this Easter Bunny Cake my mom made every year. I even liked the coconut she strategically only put on the ears because my big, ugly, stinky brothers did not like coconut. She did 90% of the cake and decorating when we were little. I was usually the coconut sprinkler and bow tie jelly bean artist.
I looked forward to starting this tradition with my own family years before they arrived because I had thought of a twist. I would let them decorate it all by themselves.
I love the brainstorming, teamwork, compromise, and watching them sneak little bites, you know, to make sure it tastes all right. Wouldn’t want to serve anything less than perfect.
Ages 10, 8 and 7…They went more philosophical this year with a “concept cake”. The brainstorming was hilarious as they agreed upon a concept they called “Half & Half” .
Meet Half Steve (normal) and Half Cray Cray (crazy). Hmmm…were they inspired by their half crazy mother?
PS. To make the Easter Bunny cake, just bake any flavor (kids’ choice) in 2 circle cake pans. One is the face. When you make two cuts to make the ears from the other circle, you are also making the tie shape. Or depending on how you look at it, you may be cutting the tie with ears leftover.
PSS. By all means, apply this “kid-made” cake strategy to any cake in your life. Then, when you bring it to a party there’s zero stress of perfection. Actually, apply that non-perfect strategy to all areas of your life.
